Spinach leaves Masial


              Spinach Leaves cooked as below 


Spinach 200 Gms
Green chillies 4
Onion 1 medium
Lime juice 1 teaspoon


Wash the spinach and remove stems.

Cut them into large sections and place in a cooking pot along with diced onion, green chillies cut lengthwise into two, salt and 1 tablespoon water,

Cover and cook in low fire.

There will be enough liquid coming from the leaves and the leaves will be cooked quickly. Do not overcook; you will lose all the goodness.

Stir occasionally and simmer.

Remove from fire when ready and add lime juice and toss.

Spinach is a good source of iron which does not get absorbed and vitamin C is necessary for its absorption. Lime juice has vitamin C and helps the absorption.
