Rice Dishes - An Introduction

Rice is the staple diet in Yarlpanam and every family eat rice everyday at least once. Mostly rice is eaten with a variety of curries providing a well balanced diet. Most families usually cook the parboiled country rice for their meals. This country rice is a common variety of rice grown in North and Eastern provinces of Sri Lanka.

There are many different varieties of rice available - red rice, long grain rice, samba rice, basmati rice etc, of which red rice and samba rice are grown in Sri Lanka. Also there are two different types of rice - parboiled rice which is sometimes called easy cook rice and this is rice already boiled with its husk, dried and dehusked. This is easy to cook and do not stick. The other is raw rice which as its name suggests is raw and not initially boiled. This rice has a different taste and tends to stick when cooked and needs extra care to prevent from sticking.

Two different methods are adopted in cooking rice;

1) Draining method- rice is normally cooked with water and when cooked, the excess water is drained off and saved. This water called kanchi (கஞ்சி) contains all the goodness of the rice. This is drunk either on its own or with coconut milk or combined with some curries specially manioc curry and is delicious.

2) The other - Absorption method is to cook the rice in a pot with twice the amount of water by volume on low fire until all the water has been absorbed when the rice will be perfectly cooked. With this method all the goodness of the rice is kept with the cooked rice. When you use the absorption method, a good rule of thumb is to cook the rice with twice the volume of water for perfectly cooked rice. Rice can be cooked by this way on a cooker, rice cooker or even a microwave cooker.

In the days gone when there were no refrigerators, the excess cooked rice left over was placed in a clay pot and water poured in it to cover the rice and pot covered and left overnight. In the morning this rice (Pazham saatham - பழஞ்சாதம்) was in demand and eaten with coconut sambal or any other gravy left over.

அரிசி உணவுகளுக்கு ஒரு அறிமுகம்.

யாழ்ப்பாணத்தில் சோறு ஒரு பிரதான உணவாகும். ஒவ்வொரு குடும்பத்திலும் தினமும் ஒரு தடவையாவது சோறு உண்பார்கள். வழமையாக சத்துடைய பலவித கறிகளுடன் இதை உண்பார்கள். அனேகமாக நாட்டுப் புழுங்கலரிசி சோறைத் தான் உண்பார்கள். இந்த நாட்டு அரிசி இலங்கையில் வடக்கு கிழக்கு மாகாணங்களில் அறுவடை செய்யப்படும்.

இலங்கையில் பல வித அரிசிகள் காணப்பட்டாலும் சிவப்பு அரிசியும் சம்பா அரிசியும் இங்கே அறுவடை செய்யப்படும். சிவப்பு அரிசியில் புழுங்கல் அரிசியும் பச்சை அரிசியும் என்று இரு விதம் உண்டு. புழுங்கல் அரிசி நெல்லை முதல் அவித்து காயவைத்து குத்தி வருவதாகும். இது வழமையாக சோத்திற்கு பாவிக்கபடும். பச்சை அரிசியானது நெல்லை அவியாது குத்தி வருவதாகும், இது பொங்கு வதற்கு பாவிக்கப்டும்.

சோறு அவிக்கும் போது இரண்டு விதமாக செய்வார்கள்; தண்ணீர் விட்டு அவிந்ததும் எஞ்சி இருக்கும் கஞ்சியை வடித்து விடுவார்கள். இந்த சத்துடைய கஞ்சியை தனியாகாவோ அல்லது கறிகளுடனோ சேத்து குடிப்பார்கள். மற்ற முறையில் சரியான அளவு தண்ணீரை விட்டு அந்த தண்ணீர் வத்தும் வரை அவித்து எடுப்பார்கள். இந்த முறையில் அரிசியில் உள்ள சத்துக்கள் யாவும் சோற்றில் தங்கி இருக்கும்.

பழைய காலத்தில் குளிர் சாதனப் பெட்டிகள் இல்லாத போது மிஞ்சிய சோற்றை ஒரு பானையில் போட்டு தண்ணீர் விட்டு வைப்பார்கள். அடுத்த நாள் காலை இந்த பழைய சாதத்தை சம்பலுடன் அல்லது கறிகளுடன் உண்பார்கள்.
