Garam Masala - Flavour enhancer
This blend is added to the meat curries when cooking in order to enhance the flavour and give a high spicy flavour. It is also roasted and ground and this can be done at home. Since these spices can lose their flavour on storage, it is advised to store for a couple of days. It is best that this is prepared fresh every time. Also this blend is available in Asian shops.
Cinnamon sticks 3 inch piece - broken into small pieces
Fennel seeds 3 teaspoons
Cardamom 6 pods
Pepper corns 10 - cleaned
Dry roast all the ingredients over a low flame until fennel seeds turn golden.
When cool, break open the cardamom pods and retrieve the seeds from them and discard the shells.
In a grinder, place all these ingredients and grind them to a fine powder.
Use about 2 - 3 teaspoons of this mixture to add to curries when curry powder is added.
This powder can be stored in an air tight container for a few days.
