Onion Flower Varai
The spring onion we buy in the West is different from this spring onion flower available from the Indian and Sri Lankan shops. These are the actual onion flowers with their stalks.
Spring onion flowers 200 Gms
Onion 1 small
Dry chillies 4
Coconut scrapped ½ cup
Oil 1 tablespoon
Select tender spring onions with flowers at the top. Wash and cut into ¾ inch pieces. Keep the flowers at the top.
In a hot pan, add 1 tablespoon oil and fry diced onion until golden,
Add cut dry chillies and stir.
Add the cut pieces of spring onion, 2 tablespoon water and salt and cover and cook until they are soft.
Occasionally stir and check if cooked...
When cooked and dry, add the coconut scrapings and stir.
Cook further for 3 more minutes.
