 Milagu Saatham - Pepper Rice


Ingredients:

Basmati Rice 2 cups
Vegetable oil 2 tablespoons
Curry leaves 6
Cumin seeds 1 teaspoon
Black peppercorns 1 teaspoon
Salt to taste
Water 4 cups

Method:

Heat a pan and add oil, add curry leaves, cumin seeds and peppercorns and fry for a few seconds.

Add the rice and salt and stir for 3 to 4 minutes.

Add the water and bring the water to the boil.

Reduce the heat to low, cover pan and cook until the all the liquid has been absorbed.

Loosen the rice and serve.

Serve with: Usually with lamb curry.
