Vegetable cutlets

 

A savoury Mixture of vegetables mixed with mashed potato and made into balls which are coated with breadcrumbs and fried in oil.

Ingredients:

Vegetables like Carrots, Peas, Beans, Cabbage, and Cauliflower - the choice is yours and quantities should be about 200g or use frozen mixed vegetables
Potato 100 Gms
Green Chillies 4
Onion 1 medium
Ginger 1 inch piece
Garlic 2 cloves
Bread crumbs for coating
Oil for frying

Method:

Skin and boil potato and mash coarsely.

Grind ginger and garlic into a paste

Cut your selection of vegetables into small pieces and steam them until cooked.

In hot pan add 1 tablespoon of oil and fry the diced onions until soft.

Add the garlic, ginger paste and stir.

Add the mixed vegetables and salt and stir.

Add mashed potato and mix well.

Let this mixture to cool and then make lemon sized balls.

The balls must be firm if not add some corn flour to the mixture.

Either keep them as balls or flatten them with hands into discs.

Coat with bread crumbs and deep fry in hot oil.

This do not need any accompaniments, serve on its own.
