Microwave Meat Dishes

Meat curry

We will describe a meat curry which is common to lamb, chicken or beef depending on the meat you wish to cook in a microwave oven. The duration of cooking will vary with different meat so you need to adjust the time accordingly.

Ingredients:

Meat -Lamb, Chicken or beef 500 Gms - can include some bones
Roasted curry powder 1 ½ tablespoons or Curry paste 2 tablespoon + Green chillies 2
Onions 1 large
Ginger 1 inch piece
Curry leaves 10
Fennel seeds 1 teaspoon
Oil 2 tablespoon
Lime juice ½ tablespoon
Coconut milk or milk 1 cup
Salt to taste

Method:

Wash and cut meat into ¾ inch pieces, drain and set aside.

Dice onions and cut ginger into very small pieces.

In a pan on a conventional cooker, place the fennel seeds and heat until they turn golden.

Add the oil and fry the onions until golden brown.

Now add curry leaves and ginger pieces and fry further for one minute.

In a microwaveable dish, empty the contents of the pan and add the meat pieces, salt, curry powder and ½ cup warm water and stir, cover and cook in low heat for ten minutes.

Stir the dish contents well and heat again in low heat for a further 10 minutes.

Taste and adjust salt etc and check if meat is evenly cooked.

At this stage if you want the curry to be dry - cook again for further 10 minutes in low heat.

But if you want the curry to be with some gravy, then add the milk and cook for 10 more minutes in full heat.

Remove, stir and leave it to rest for 5 minutes

Add lime juice and stir.

It is ready to eat.
